We offer whole, half, and quarter bulk beef on a price per pound basis. The weight is based on the hanging weight after slaughter, which is approximately 60% of the live weight for our steers. Once the steer is processed, the carcass yield (meat you put in your freezer) will be approximately 70% of the hanging weight. The carcass yield is dependent on how you decide you want your cuts. Bone-in vs. Boneless steaks, etc. can make a big difference on weight of the meat you take home. This is why we charge based on the hanging weight.
This is a custom butcher service. You will choose exactly how you want your beef processed and packaged. Beef will be vacuum sealed and boxed, ready to go in your freezer!
